Ingredients (Makes ~16 balls)
½ cup loosely packed medjool dates (soaked in boiling water 10-15 minutes
beforehand and strained)
½ cup almond butter
¼ cup coconut oil, melted
4 tablespoons of cacao powder
¾ cup almond meal
½ cup hemp seeds + extra for rolling
4 tablespoons hemp protein powder
½ cup desiccated coconut
Method
In a food processor, combine soaked dates, almond butter and coconut oil and blend until a
thick paste forms.
Add cacao powder, almond meal, hemp seeds, hemp protein and desiccated coconut, blend until it turns into a crumbly, doughy consistency.
Roll into balls, coat in hemp seeds and store in the fridge for up to 1 week or freeze for a ready to go snack!
