Kiwi & Strawberry Salad

I created this salad to help my clients and community get more kiwi into their day. Did you know that two kiwi with the skin on provides a research backed treatment for constipation?

Dietary fibre is one mechanism of action, but the kiwi also contains an enzyme (actinidin) which facilitates motility and your bowel motions! It’s been shown to improve bowel motions in IBS - constipation dominant individuals in just 4 weeks.⁠


I love that we can use the power of real food to shape our recipes and ultimately how we feel.

Ingredients (serves 2 as a side)

100g mixed lettuce leaves

1 cup strawberries, sliced

3 gold kiwis, diced

1 avocado, diced

2 tablespoons extra-virgin olive oil

2 tablespoon lemon juice

2 tablespoons hemp seeds


Method

In a large bowl, combine mixed lettuce leaves, strawberries, kiwis and avocado.

Pour over olive oil and lemon and toss to coat.

Sprinkle with hemp seeds and serve alongside your choice of protein (e.g. 120g of seared organic non-GMO tofu or tempeh).
